Beef Tallow "Retro" McDonald’s Fries

Prep time: 45 minutes + chilling

Cook time: 10 minutes

Yield: 2–4 servings


Ingredients

Potatoes: 2 large Russet Burbank potatoes (peeled)

Brine/Soak: 4 cups hot water + 2 tablespoons granulated white sugar (replaces corn syrup to achieve signature golden browning without corn)

Frying Medium: 4 to 6 cups 100% pure beef tallow

Seasoning: Fine sea salt or popcorn salt


Instructions

1. Cut the Shoestrings: Slice the peeled potatoes into uniform 1/4-inch by 1/4-inch matchsticks. Rinse them thoroughly in cold water to wash away excess surface starch. 

2. Sugar Soak (The Secret to Color): Dissolve the sugar in hot water. Submerge the cut potatoes in the sugar water and soak in the refrigerator for 30 minutes. (This step ensures even, light browning during frying.) 

3. Dry Thoroughly: Drain the potatoes and pat them completely dry with paper towels or a clean kitchen towel. Any leftover moisture will cause the tallow to splatter. 

4. First Fry (Blanching at 325^\circ\text{F} / 160^\circ\text{C}): Melt the beef tallow in a heavy pot or deep fryer and bring it to 325^\circ\text{F} (160^\circ\text{C}). Fry the potatoes in small batches for 2 to 3 minutes until cooked through but still pale. Remove and drain on a wire rack.

5. Freeze (Crucial step for texture): Let the par-fried potatoes cool completely, then place them in the freezer for at least 1 to 2 hours (or overnight). Freezing breaks down internal moisture structure, creating a fluffy interior and crisp exterior when fried a second time. 

6. Second Fry (Crisping at 375 F / 190 C: Heat the beef tallow to. Fry the frozen potatoes in batches for 3 to 4 minutes until deep golden brown and hyper-crispy. 

7. Season: Drain excess fat, immediately toss with fine sea salt while hot, and serve immediately
